homemade pesto



pesto (makes four cups)
1/4 cup walnuts (i actually used pistachios)
1/4 cup pignolis (pine nuts)
3 tablespoons diced garlic (about nine cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan cheese


place nuts and garlic in food processor and process for about 30 seconds.  add basil, salt and pepper.  with food processor on, slowly pour the olive oil into the bowl through the feed tube and process until finely pureed.  add parmesan and puree for a minute.  then eat with a spoon if your name is finn...
