panzanella


so easy, so good.
i like to make this with the par-baked filome bread from trader joe's (thanks to allie's suggestion, i am now obsessed), but it is also good to make if you have any stale bread (stale, not moldy) that you need to get rid of.  you can add whatever you like, but i always make it with tomatoes, basil, mozzarella and red onions.  occasionally, i also use bell peppers.  it is delicious with cucumbers, as well.  

slice and cube the bread.  heat olive oil and garlic in a pan and add the bread.  toss over low heat for about ten minutes or until the bread is just getting crispy and brown (or to your liking...).  remove from heat and throw together all your fixings (already sliced and diced, obviously).  toss with a balsamic vinaigrette (or dressing of your choice).
