aka Bald Heads
This recipe is from my cousin-in-law Jessica. Her husband Patrick named them "bald heads" because well, they kind of look like that. But they're delicious, I promise. Emily, it's up to you to make some and post a picture!
4 peaches
1 pie crust (9 inch), unbaked
1/4 c. melted butter
1 1/2 c. powdered sugar
1 tsp. almond extract
1 egg, beaten
Divide pie crust into 4 equal squares. Wrap each peach in pie crust, pinching the edges to seal. Place in baking dish, sealed edges downward. Bake at 350F for 45 minutes. Combine remaining ingredients in a saucepan and cook, stirring constantly, until the mixture boils and thickens to a syrup consistency. Place peach bombs in serving dishes and top each with 1/4 of the sauce.
You'd better have some vanilla ice cream or whipped cream to go with this, it's so rich!
